Lemon & Apricot Pudding

Ingredients

  • 1 cup self-raising flour
  • ½ cup sugar
  • ½ cup apricot jam
  • ½ cup butter, melted
  • ½ cup milk
  • 2 large eggs
  • Zest of 1 lemon
  • ¼ cup lemon juice


How to cook

  • Preheat your oven to 180°C and grease a baking dish.
  • In a bowl, whisk together the flour, sugar, butter , milk and eggs until smooth.
  • Stir in the apricot jam, lemon zest, and lemon juice.
  • Pour the batter into the prepared dish.
  • Bake for 30-35 minutes or until golden brown and set in the middle.
  • Serve warm, topped with extra jam or whipped cream.
