Chicken & Broccoli Bowl 


Ingredients


  • 1/2 cup chicken broth
  • 1/3 cup sodium soy sauce
  • 3 cloves garlic, finely chopped
  • 3 Tablespoon honey
  • 2 Tablespoon cornstarch
  • 1 Tablespoon finely grated peeled ginger
  • 2 Teaspoon toasted sesame oil
  • 1 Tablespoon oil
  • 500g boneless, skinless chicken thighs or breasts, cut into bite size pieces
  • 2 medium heads broccoli, cut into bite-sized pieces
  • Cooked brown or white rice



Method

In a small bowl, whisk broth, soy sauce, garlic, honey, cornstarch, ginger and sesame oil until cornstarch is dissolved


In large skillet or wok over high heat,


Add oil once oil is hot

Add chicken and cook until golden brown and remove

in the same pan over a medium heat, add broccoli and broth mixture.

cover for 2 to 3 min until crisp tender.

Add in cooked chicken and stir in sauce for 1 to 2 min

Place rice in bowel and spoon chicken and broccoli over the rice

Top with sesame seeds and enjoy.
